Cooking Light meets America's Test Kitchen

What a great combination! The meatloaf muffins are from Cooking Light. And the sweet potato casserole is from America's Test Kitchen. I cannot say enough about this sweet potato casserole. It's the best I've ever had. But not very low fat. So the healthy meatloaf muffins help to balance it out. Served with a little roasted asparagus. Delicious dinner!

  1. I love, love, love America's test kitchen. I make some pretty darn good mashed sweet taters that are (relatively) low in fat. The trick is using buttermilk, good bourbon, and orange zest.
