Well tonight I had class at 6:30. So...I had to pull something together and quick! So I used leftover meat and cheese from last night's Stuffed Poblanos and made Mexican Pizza. Super easy and tasty! I use enchilada sauce for the pizza sauce and 8 Grain Tortillas for the crust. Then top with whatever you like. I like olives and pickled jalapeños because I fix these on my school nights and those come out of jars. You will notice the lettuce for a hint of green. Those are from my "garden". *Joy!*
